I think this is the same establishment that regularly sings O for the wings of a dove at Pentecost.
As far as Phos Hilaron is concerned, it's always possible to tweak the words, as we do with Simon Lole's version, A Song of the Light. We just change "now as we see the light of evening" to "…morning", which seems to work fine. (We've never sung it in the afternoon, but I guess "teatime" would fit nicely too.)
